You might be surprised to see a "paleo" class here since I'm not one to follow fads or trends. And that's exactly why I'm excited to teach this class--I'll get to myth-bust some of the trends coming out of the paleo world and also highlight some pretty cool healthy culinary techniques that have come out of the movement.
So what is paleo? The paleo diet builds meals around natural foods like quality pastured meats, low-starch vegetables and quality fats. This class is an intro to the basic concepts of "paleo" and provides reasonable, flavorful, and creative ways to build meals around those core foods.
Instead of concentrating on what's off limits (which is a lot in the strict paleo world: grains, beans, sugar, oils, and dairy) and going to the extreme, we'll focus on how to best use the good stuff and clear up some fact and fiction about popular paleo trends.
We'll dive into the healing properties of homemade broth (over the store-bought kind) and get creative making pizza dough from cauliflower! Plus a decadent chocolate mousse ends the evening on a sweet (but sweetener-free) note.
